Eid is one of those festivals, which is all about food, love and gifts. Love and food are synonyms of each other in a way. One needn’t be an Islamic person in order to celebrate Eid. Eid is celebrate by almost everyone through-out the globe in one way or the other. For those who don’t keep Ramzan, it is all about the great food. The kebabs are what almost all of us look forward too. This eid, make those finger licking and melt in the mouth kebab on your own and enjoy them with your family and friends and celebrate the amazing full of love festival of Eid. So here are the recipes for three such Kebabs ,that you can make easily at home, anytime you want to.

1 Kakori Kebab:

Lucknow has been famous for its Kebabs for a very long time. But if you don’t stay in Lucknow, it is very hard to enjoy those extremely flavorful kebabs. But here is your chance to make one of those amazing kebabs at home. Kakori Kebab is a Lucknowi Kebab, which melts in your mouth in an instant and will keep you coming back for more.

Ingredients:

800g boneless mutton

50g raw papaya

100g ghee

80g roasted basin

3tsp ginger paste

3tsp garlic paste

2tsp red chili powder

4-5 cloves

Salt to Taste.

For the Kakori Masala:

½ tsp black pepper

5 cloves

1tsp green cardamoms

5 black cardamoms

7-8 rose petals

½ tsp poppy seeds

1 ½ tbsp cashew nuts

A pinch of mace

A pinch of nutmeg

1 onion, sliced

4-5 dry red chilies

For the Accompaniments:

Mint chutney

Onion rings

Lemon wedges

Procedure:

1 Mince the mutton to a fine paste, passing through the mincer 4-5 times. This step can be done at butcher’s shop.

2 To make the kakori masala, slice the onions and fry it in ghee till golden brown with the masala ingredients.

3 Grind to a fine paste.

4 Grind the raw papaya to a fine paste and add to the mutton minced.

5 Add roasted basin, salt, ginger garlic paste, cloves and red chili powder.

6 Mix well.

7 Add the earlier prepared kakori masala to the mince and mix it well.

8 Make a well in the center of the mixture and place a live coal inside with touching the meat.

9 Pour some ghee over the coal and add a few cloves.

10 Cover and smoke the mince for 10-15 minutes.

11 This imparts a unique smoking flavor to the minced meat.

12 One can also avoid this step if you do not like the smoking flavor.

13 Divide into equal portions and wrap around the kebab skewers.

14 Cook over live coal till golden brown.

15 Alternatively, you can cook it in the OTG for about 10-15 minutes at 250degree centigrade.

16 Remove Kebabs from skewers and serve hot with lemon wedges, mint chutney and onion rings.

Serves: 6-7

2 Galouti Kebab:

Galouti Kebab, is also a type of Avadhai Kebab, which you can make easily at home. This Kebab melts in the mouth gives you an amazing burst of flavor in your mouth.

Ingredients:

400 g mutton minced

50g raw papaya

50g lamb fat

40g gram flour roasted

½ tsp red chili powder

2tsp ginger garlic paste

50g ghee

Salt to Taste

4 lime wedges

Onion Rings to Garnish

For the Galwati Masala:

½ tsp black cardamoms

1tsp pepper corns

¼ tsp mace and green cardamom powder

¼ tsp cinnamon powder

¼ tsp nutmeg powder

1tsp all spice powder

Procedure:

1 Mince them mutton and lamb fat to a fine paste.

2 Grind the raw papaya to a fine paste and add to the mince.

3 Add roasted basin or gram flour, red chili powder, salt and ginger garlic paste.

4 To make the galwati masala, grind the masala ingredients and combine with the mince.

5 Heat ghee in a pan, make round medallions of the lamb mix.

6 Cook on both sides till well done.

7 Serve hot with onion rings and lime wedges.

Serves: 4-5

Note: The raw papaya helps in tenderizing the meet so that the kebabs cook easily.

3 Shami Kebab:

Shami Kebab, is one of the most popular kebabs, and we all have had it at in our lives at some point of time or the other. They are the simplest types of kebabs one can make it home. It is a perfect snack for every occasion. The flavors of the kebab are just lip-smacking.

Ingredients:

250g mutton, minced

2 onions, chopped finely

2 green chilies chopped

6tbsp split gram dal, washed (channe ki dal)

1tsp black pepper

1tsp cumin powder

½ tsp cinnamon powder

Salt to taste

Bread crumbs as required

Ghee for shallow frying

Onion Rings

Lemon Wedges

Mint Chutney

Procedure:

1 Put all the ingredients in a pressure cooker with half cup of water, except for the oil and bread crumbs.

2 After one whistle, lower the heat and let the meet cook for 5-10 minutes.

3 Remove the ingredients in a wok or a non-stick kadhai and dry the mixture completely.

4 Grind it in a blender.

5 Make small flat balls of the minced meat mixture.

6 Heat oil in a non stick pan.

7 Shallow fry the flat balls of minced meat mixture or kebabs, till golden brown on both sides.

8 If you feel that the kebabs are not firm enough and breaking while frying then add some bread crumbs to the mixture, in order to hold the kebab together.

9 Serve Hot with onion rings, lemon wedges and mint chutney

Serves: 4-5 people.
