A typical Indian meal involves a lot of work, as one part of the meal is incomplete without the other. Indian food is no doubt everyone’s favorite. But there is one such cuisine in one which one dish is enough as a meal. That cuisine is Italian. Italian, no doubt about that is indeed one of the most loved cuisines’ not only India but all over the globe. Italian food is rich in flavor. The tastes might make one wonder whether Italian food is extremely complicated to make or not. But in truth it isn’t as complicated as one would anticipate it to be. So here is your chance to make this amazing delicate cuisine at home and enjoy it.
1 Tomato and White Sauce Lasagna:
Lasagna are sheets of pasta which are easily available in the market. In this recipe they are cooked in a combo of white sauce and tomato sauce, to give it a lip-smacking flavor.
8 sheets of lasagna
1 cup cheddar cheese
1 cup mozzarella cheese
For the Tomato Sauce:
2 tbsp oil, preferably olive oil
500g tomatoes, blanched, peeled and chopped
2-3 tbsp tomato sauce
1 green capsicum, diced
1 cup corn kernels or American sweet corn
1 carrot, finely chopped
½ red pepper, diced
½ yellow pepper, diced
½ tsp dried oregano
15-20 fresh basil leaves, shredded
½ tsp freshly ground black pepper
Salt to taste
1 tsp brown or white sugar
For the White Sauce:
2 tbsp melted butter
2 tbsp plain flour
2 cups milk
Salt and Pepper to taste
¼ cup cheese
For Tomato Vegetable Sauce:
1 Heat the oil in a pan and sauté the vegetables for 2-3 minutes.
2 Add the tomatoes, basil, oregano and black pepper, along with the tomato sauce, salt and sugar.
3 Bring it to a boil and simmer uncovered for about 15 minutes.
4 Cook till the sauce thickens. This will take about 10-15 minutes.
For the White Sauce:
1 Melt the butter in a heavy pan, over low heat.
2 Add the flour and sauté until the mixture changes color, but doesn’t burn.
3 Remove from the heat.
4 Gradually add the milk, stirring continuously in order to avoid the formation of lumps.
5 Return to the heat and stir until it burns.
6 Reduce the heat and simmer for 3-4 minutes, stirring continuously till the sauce thickens.
7 Add the cheese and salt and pepper.
8 Keep aside.
For the Lasagna :
1 Boil the lasagna sheets till andante.
2 Spread a layer of tomato vegetable sauce, at the bottom of the glass baking dish.
3 Place two boiled lasagna pasta sheets on top of the already spread out tomato vegetable sauce.
4 Cover the pasta lasagna sheets with white sauce and sprinkle cheese on top.
5 Add another layer of tomato vegetable sauce.
6 Then add another layer of lasagna and cheese.
7 Make 4 such layers in all.
8 Sprinkle a lot of cheese on top and bake in a pre-heated oven at 180 degrees.
9 Bake it for 20 to 25 minutes.
10 To check whether it is done or not, stick a knife into it and it should come out clean.
11 You can bake the lasagna an hour before serving as this plums the pasta lasagna sheets.
12 Re-heat covered with aluminum foil before serving.
Serves: 6-8 people.
2 Mushroom Risotto:
Making the risotto is no rocket science, though it is a time consuming procedure, the risotto is very simple to make. You can now enjoy this delicious risotto in the comfort of your own 4 walls.
1 cup Arborio rice
2 tbsp butter
1 tbsp garlic, crushed
1 onion, finely chopped.
100g mushrooms, washed and cut into slices.
½ cup white wine.
4-6 maggie soup cubes
Salt to taste
½ tsp pepper
½ cup grated cheese, preferably parmesan cheese
½ cup cream
10-12 basil leaves, shredded
1 Heat butter in a pan.
2 Add crushed garlic and sauté for 30-40 seconds.
3 Add the finely chopped onions and sauté for another 1 minute.
4 Add the chopped mushrooms and sauté
5 Add the rice and mix in with the vegetables.
6 Add the wine and cook, till the wine dries up.
7 In another pan, boil around 6 to 8 cups of water with the soup cubes.
8 When the wine dries up, add 3-4 ladles of the prepared stock to the rice.
9 Once the already poured water dries add more water in the same amount.
10 Keep repeating the procedure till the rice is completely cooked.
11 Finish off with the cream and cheese and a few basil leaves.
12 Serve Hot.
Serves: 4 people.
Note: Chicken or prawns can be substituted for the mushrooms. The Arborio rice should not be soaked in advance. It can be cooked like 80 percent before hand and before serving, the last installment of water, can be added along with the cheese and cream. This is a complete food in itself and needs no accompaniments.
